Halibut with Grapefruit Salsa
- 1 cup ruby red grapefruit segments
- 1/4 cup grapefruit juice
- 1 TSP grapefruit zest
- 1 fennel bulb, trimmed
- 1/4 cup olive oil
- 2 TBSP pitted olives (Nicoise if available), halved
- 2 TBSP chopped fresh parsley leaves
- 1 TSP salt
- 1/8 TSP red pepper flakes
- 4 Halibut fillets
- 1/4 TSP ground black pepper
- Preheat the oven to 375 degrees F.
- Mix together the grapefruit, juice, and zest. Slice the fennel bulb in half lengthwise and proceed by slicing the entire bulb thinly. Mix fennel into the bowl with the grapefruit. Add the olive oil, olives, parsley, 1/2 teaspoon salt, and red pepper flakes. Stir until evenly mixed.
- Add the Halibut fillets to a parchment-lined roasting pan. Sprinkle with remaining 1/2 teaspoon of salt and pepper and bake for 10 to 12 minutes (or until fish begins to flake)
- Once fish has cooked thoroughly, place each fillet onto a dinner plate and add a serving of the grapefruit salsa on top.
- Serve and enjoy.
