Laura HoggLet me be frank. I love cheese.
However, I eat a vegan diet for a significant portion of the year.
Dilemma.
Usually, when I'm eating a vegan diet, I just try to put cheese out of my mind. I have been to some excellent restaurants that include vegan cheese (including a vegan pizza that might just be some of the best pizza I've ever had), but when I'm not eating out, I usually don't include cheese substitutes in my cooking.
But lately, I've been coming across some vegan cheese recipes that look way too good to pass up. I've found some here and here and I am so tempted to try them out...but I'm a little nervous because truthfully, I don't know much about cooking.
Any advice? Have any of you made your own vegan cheese? If not, have you tried any vegan cheese substitutes that don't taste like rubber or cardboard?

I have not made my own vegan cheese, though I am a huge fan of Daiya vegan cheeses. They taste the best out of those that I have tried and for those days you do not have the time to prepare your own, I encourage you to give it a try :)
