Jessica Corwin, RDExcellent question, Sue! I absolutely love recipe makeovers and spinach dip is one I worked with during my dietetic internship. You can always add more spinach and swap the high fat dairy for reduced fat or fat-free to start. I enjoy swapping out sour cream for non-fat plain Greek yogurt to boost the calcium content myself :)
More recently I tried out a recipe I found in Martha Stewart magazine that incorporates white beans as a way to trim the fat while still maintaining that creamy texture. I have found other recipes which use avocado to get the same results (yum!). Here is the recipe using white beans:
Ingredients: 5 oz. baby spinach (if fresh, steamed and drained) (if frozen, thawed and drained) 1 cup part-skim ricotta cheese 15 oz can white beans, drained and rinsed 1 small shallot, finely chopped 1 1/2 teaspoons lime zest 1 1/4 teaspoons coarse salt Freshly ground pepper
- Using a food processor (or immersion blender) puree the cheese and beans until smooth.
- Add in the shallot, lime, and seasonings, and quickly blend again.
- Finally, add the spinach and mix by hand.
- Pour the mixture into a 1-qt glass baking dish and bake for about 30 minutes at 350.
Serve warm with fresh veggies or whole grain bread and enjoy!
