5 Quick and Healthy Lunch Ideas

Breakfast isn't the only meal of the day that should be made healthy. There are some great ideas for fixing a healthy lunch for any day of the week. If you are working, you can do some of these the night before or can quickly make them within a few minutes. The key to a healthy lunch is to not eat anything too heavy. Likely you will still need to get back to work, and you don't want to feel sleepy from all the lunch you just consumed.
Leftovers for Lunch
If you made a barbecue chicken dinner the night before, you can easily turn that into lunch for work. Simply use the chicken to create a sandwich. Just add a little bit of sauce over the chicken, if there is not enough already, and include some sliced carrots. Light ranch dressing is exceptional as well. If you have other great and healthy foods that you ate for dinner, include small portions into a bowl. Remember, a light lunch is best, so that you won't get weighed down for the remainder of the day.
Chips 'n' Dip
You can make a healthy bean dip lunch with salsa and a can of refried beans of your choice. Then you can add your favorite veggies and sprinkle some cheese (not too much). This should all take about 5 minutes, so it's perfect for making in the morning before you leave to work.
Salad
There are various salads you can create, most only taking 10 or so minutes to make. You can do a shrimp cobb salad. This will need cooked peeled shrimp and the combination of:
- Lettuce
- Tomatoes
- Cucumber
- Hard boiled egg
- Season w/ pepper
Then toss it around. When you're ready to eat, just top it off with a light ranch or dressing of your choice. Other salads are also great - just replace the shrimp with slices of grilled chicken or turkey.
Sandwich
This classic lunch is still a great way to go. You can make many different types of sandwiches, such as turkey, bologna and tuna. These are all quick to make and great to the taste. You can make tuna the night before, mixed with slices of boiled egg and a hint of pepper. Use light mayonnaise and lettuce as well. Wheat bread is definitely the option for making sandwiches. Or you can try deli sliced turkey with light mayo and lettuce. Shred a little bit of cheese onto both of these sandwiches and you'll be set for lunch. If you like your sandwiches professionally made, go to your local deli and order up a turkey or tuna sub. Make sure to watch that they don't put too much of each ingredient on it.
Wrap it Up
You can make a delicious wrap with tortilla bread with either of the two recipes below.
Peanut tofu wrap. With this lunch, you will need to spread peanut sauce on the tortilla bread, then place the tofu, pepper and snow peas in the center. Then fold the sides over the filling and roll it up.
Tuna and bell pepper pocket. This will need a combo of tuna, green peppers, celery and onions. Mix these ingredients into a bowl and in a second bowl, combine some dressing, black pepper and oregano. Then pour the ingredients of the second bowl onto the first bowl then stir. You will then refrigerate for a few hours. This is best made the night before. When ready (you can wait 'til morning), you place a couple of sliced tomatoes and lettuce leaves in the pita bread. Place the mix from the bowl and you've got yourself an outstanding wrap.
